Ingredients:
For the bottom crust
80g of melted butter
275g ginger biscuits
1 large egg white
For the batter
2 TBSP Kratom Calm Powder
800g full-fat soft cheese
425g pumpkin purée
200g brown sugar
50g plain flour
5 large eggs
1 large yolk
2 TBSP ground cinnamon or pumpkin spice
25g chopped pecans
3 TBSP caramel sauce
Method:
- Preheat the oven to 220 degrees Celsius.
- Butter a deep, loose-bottomed cake tin and line with baking parchment.
- Wrap the base and sides of the tin with three layers of foil to keep it waterproof during baking.
- Blitz the ginger biscuits, then add the melted butter.
- Spread the mix in the prepared cake tin and press it down with the back of a spoon.
- Bake it until it's nice and crusty.
- To make the cake batter, put the cheese in a bowl and whisk it. Add pumpkin puree, sugar, Kratom powder, flour, spices, and combine them well.
- Gradually add the eggs (one at a time) and the yolk until it reaches a smooth consistency.
- Pour the batter into the cake tin on top of the bottom crust.
- Place the cake tin on a baking tray, then pour boiling water into the tray (halfway up the side of the cake tin). Carefully place it in the oven.
- Bake for 1 hr 30 mins at 110 degrees Celsius.

For the shortcrust pastry
175g plain flour
90g cubes of unsalted butter
2 TBSP cold water
A pinch of salt

Method:
- In a bowl, add 175g plain flour, a pinch of salt, and 90g butter cut into cubes.

2 large eggs

Method:
- Roll out the first pie crust and lay it in the bottom of a deep-dish pie mold. Keep it in the fridge for at least an hour.
- Preheat the oven to 400°F
- Peel, core, and slice the Granny Smith apples into ½ inch slices
- In a large bowl, combine the sliced apples with Kratom powder, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and lemon zest. Coat every piece of apple evenly.
